Probably got sticky fuel injectors & some gas that's seen better days.  My 5.0 ran badly after sitting for about 4 months, but some Berryman's Injector Cleaner in the tank with some fresh gas fixed it right up.

How about running codes on it as well?

How long have you been driving it since you started driving it again?  If it was bad gas or a stuck injector, it "should" have cured itself in the several months since spring.  You could have a booger in an injector, or a sensor could be out of whack (ECT).
If you haven't put many miles on it since, try some new gas and injector cleaner.  You have have to pull the injectors and have them cleaned.
