Some would say because the engines are so big that they need all the airflow they can get to cool them. Others (and I) would say that they want the look of a GT or similar style race car. But remember, aircooled cars MUST have oil coolers otherwise they'll overheat, and performance flat 4's generally need the stock cooler plus an additional high capacity one to stay cool on the street.
