I was using the Mark VII front rotors for a long time.  I turn down the center hub on a brake lathe, I use the attachment for the drum brakes, pretty easy. if I remember correctly, I had removed the wheel studs, not sure if I had to, to do the machining, or just because I was putting the long 3 " studs in.  as far as the centercap, may I suggest a small spacer, maybe 1/4 or 3/8 inch,  might give you enough to fit the cap.  I used those rotors on my racecar so I was never concerned about the cap.

i'm not really a fan of wheel spacers to be honest, i don't trust them.. plus i don't like my wheels being even with or sticking out past the lip on the fender on anything that's not a 4x4 truck lol

Or you could just swap to SN95 stuff, and not have to deal with the hassle...lol

no SN95's in the junkyards around here.. a few mark 7's for rear axle donors, but hubs/rotors i will buy new.. the milling really isn't a hassle and the center cap i'll find a solution for (or use my idea of heating and 'bubbling' them out).. doing the SN95 swap is more of a hassle.. i'm not really interested in bigger brakes and 2-4 piston calipers.. the stock calipers with drilled/slotted rotors will be more than enough for what i plan for this car
