I've been looking into the 393 stroker for my car as well, I've read a lot of good about the durability of these.
I'd think that with aluminum heads and intake, a 393 would weigh somewhat less than a iron-headed HO.
Power-to-weight wise over the HO, a well-built 393 would whip the 5.0's ass everytime.
Mine's gonna be carbed though, at least for awhile.
